I might suggest you use a "Sedimentator" from Acorn Naturalists as a model:

It's a sealed tube filled with water (and gravel, two colors of sand,
peat, and clay/silt)
It works really well mounted to a vertical turntable or bearing. If
you need a bigger tube, you could just purchase several sedimentators
and pour the contents into your larger tube.
