You get what you pay for. Don't go cheap. Cheap track light fixtures get brittle after being hot all day and fall apart when you find yourself having to force them off the track.
If you go with line voltage (110-120AC) you will be able to use the tracks as power sources for exhibits. It is often less hassle to drop from above than to have to deal with trip hazards. Also there are many low voltage fixtures that will plug into the line voltage track.
Make sure they wire lots of separate circuits and each at 20AMPs minimum. This is money best spent up front in the initial package. Having more circuits installed initially is much less than having it done after the fact.
And with 25 foot ceilings I would include a genie lift in the plan if you don't already have one.
