Hi Beth,

my suggestion would be to get a heart monitor from a medical doctor 
(used on infants in the womb) and go to a zoo to record various 
animals. It is based on ultra-sound and, being used on human infants, 
it should be harmless for the animals and it seems to be fairly 
straightforward to use.

I know that this won't make it easy to get a hearbeat from a shark ...
