You may want to look into "Design It!  Engineering in After-school
Programs", (Education Development  Center, Inc; Bernie Zubrowski).
This is an excellent set of hands-on, inquiry based activities that
also includes support material for the after-school providers and
parents!

The Exploratorium also has many interesting resources that may help
with your questions about Inquiry, though I'm sure others on the list
can point to many other useful resources.  We've used experiences
gained at the Exploratorium's Institute for Inquiry with great success
in our workshops for after-school providers.
