Hi Tallis, sorry for the late reply.

Given the symptoms as well as the eosinophil count there would be valid 
reasons to looking into Eosinophilic Gastro Intestinal Disease (EGID), 
specifically Eosinophilic Colitis.  Although there is no definite answer for 
what number of eosinophils on biopsy constitutes a diagnosis of EGID it 
generally appears to be an eosinophil count above 24 per HPF.

The lead in the world for this seems to be Dr Putnam at Cincinnati 
Children's Hospital Memorial Center (CCHMC).
