I am late reading this thread but, have you tried suggesting the mother do
gentle breast compression during feedings to increase the flow of the
"hindmilk".  This can make such a big difference in the fatty portion
arriving sooner.  It also helps to speed up the feeding, something many moms
are looking for.

I agree that the green stools are a strong indicator of foremilk/ hindmilk
imbalance and I would approach that first, before eliminating any other food
in mom's diet.
