A coating on the baby's tongue can be a sign of tongue tie. If the tongue is
not moving correctly, there is not enough contact with the palate and thus
the tongue is not being cleaned. That might also explain the sore nipples.

The tongue tie might not be visible to the eye, but only felt upon digital
examination by sweeping your finger under the tongue to see if you feel a
tight frenulum.
