Elise, I certainly did not mean for my theories to be all-encompassing.
The possible contribution of environmental contaminants was raised in
another post, and as you noted, we push dairy heavily here. Babies and
the old are the most vulnerable because their immune systems are not
optimal. This whole question may be similar to the question of the
etiology of breast cancer, which has so many possible contributing
factors. Focusing on one particular factor's presence or lack may
actually mask another underlying cause. We have much to discern still.
