Some mothers have higher levels of lipase in their milk than others.  Lipase digests lipids and is not inhibited by refrigeration.  The action of lipase causes milk to taste sour upon storage.  Mums can solve this problem by scalding the milk prior to storage.  This is done by placing the milk in a glass jar or bottle and placing the bottle into a pan of boiling water.
