Could soy be the culprit?  Many babies are sensitive to it.  A vegan 
may be eating a lot of soy because in addition to tofu, tempeh, etc, 
it is an additive in SO many products (getting to be almost as hard 
to eliminate as dairy).

After eliminating the correct food(s), recovery may still take awhile 
because the baby's gut needs time to heal.
