It depends on how you set your email program. Usually it's under 
"Options- Compose" or something like that. Set your program NOT to copy 
the entire email when you are replying. Then just highlight whatever you 
want to copy into the new email and then hit the reply icon. That's how 
I copied just part of your email below. THEN change the subject line to 
the subject of the post you are replying to, instead of "Lactnet Digest 
####".
