I have missed it if this was already addressed.

"I have a coworker who has been having a problem with flaky skin on her
areolas, above the nipples."

You didn't mention the baby's age.  There is some evidence of excema
following the introduction of solids. Perhaps it's from the presence of food
in the baby's mouth or the change in saliva.  This may not apply at all
depending of the age and situation, just a thought.
