I have observed this as well.  I am unable to put my finger in the right text, but a long palate is often related to poor timing of the swallow.  I have been plagued by these babies.  Timing of the swallow is a hard one.  The good news is that as the baby grows and and the oral cavity becomes larger, I have found these babies do better.  The trick is getting these babies to feed and grow in the meantime.  One of my most recent babies had an NG tube for quite a while, but now feeds fine.
