There should be  lots of information about Celiac disease on the web. There
is also a national association for this disease that gives out very, very
good information on what to eat and what to avoid.

Grains that lack gluten are the ones that don't rise, such as rice.
Grains that do have gluten are such things as wheat, spelt, rye, oats, etc.

Health food stores carry many products without gluten.

Sorry I don't have any specifics.

Oh, yes, I am a lurker who has never posted before. I live in  far
southeastern Houston, TX and plan to take the IBCLC  exam this summer.
Right now I am a postpartum doula. We have  many food allergies in our
family and one child  doesn't  tolerate glutens (but is not celiac).
