I like the idea of giving a little olive oil!  Another idea is fresh avocado.  Another thing I have thought of is coconut milk.  The Hawaiians make Haupia, a delicious, rich pudding, of coconut milk, thickened with corn starch.  It is usually sweetened with sugar, but would not have to be, for a baby.   I did not think of it when I was trying to get Julia fattened up, but would have tried it if I had!
