 Accoring to my handy-dandy CONTROL OF COMMUNICABLE DISEASES, published by
the Amer. Public Health Assoc:  "Salmonellosis:  A Bacteria disease
commonly manifested by an acute enterocolitis, with sudden onset of
headache, abdominal pain, diarrhea, nausea and sometimes vomiting.
Dehydration,esp among infants, may be severe. Fever is almost always
present.  Anorexia and diarrhea often persist for several days."
My Summary of relevant facts:
-there are 2000 known serotypes
-it occurs worldwide; classified as a foodborne disease because food is the
predominant mode of tranmission.
-only 1% of clinical cases are reported; est. 5 million infections in the
US each year.   Obligatory case reporting under class 2B; no quarantine
nec.
-incubation 6-72 hours (usually 12-36 hrs)
*Reservoir:  Domestic and wild animals, including poultry, sine, cattle,
rodents and pets such as tortoises, turtles, terrapins, chicks, dogs, cats,
humans
*Prevention: thoroughly cook all foodstuffs derived from animals; avoid re
and cross contamination; refrigerate immediately and in small containers.
-educate foodhandlers;
-Thorough handwashing for everyone--foodhandlers, children (especially with
above mentioned pets).
-know the appropriate treatment for dehydration.
