Possibly because there is so much casein in packaged and bottled and canned food products that we aren't aware of. This could be the source of continuing problems with allergy to cow's milk, and could be why it takes so long to clear - we continue to consume it unaware.

It still is wise to "shop the perimeter" of the store: meats, veggies, fruits - skipping dairy, of course. Be suspicious of anything pre-prepared, mostly displayed in the middle aisles of the store. Read carefully on breads, or bake your own. Yeah, like new moms have time for that! It's the convenience of pre-prepared foods that we have come to depend on. How did our great-grandmothers DO it?
