My folks had a dairy when I was a kid and always stressed the importance of keeping the milk at a constant temperature.  The said that mild (even the pasturized and homoginized stuff) would go rancid very quickly if it were allowed even a little and
cool again.  Even faster than the milk left at room temp for a while.
