Just had to offer an irrelevant (mostly) to Lactnet comment that I tried
substituting silken soft tofu for  the evaporated milk in a standard pumpkin
pie recipe, mixed it in my blender, and otherwise followed the directions.
It came out better tasting and a smoother consistency than the one we made
with the traditional ingredients! And an added bonus that there was no worry
about using brands on the boycott list!

Not sure what tofu would do to coquito.... ;-D
