She is eating well but

I agree with your suggestion that she up her calorie intake with whole
foods.  If she is "burning up the calories" and is losing weight, she does
*not* have a healthy diet.  A healthy diet maintains a healthy body,
including some fat stores for emergencies and daily maintainance. One of the
problems of studies of proper diets is the assumption that we all should eat
prescribed foods in the same amounts.
