Always interesting, this question, Naomi... ;o)
The difference will never ever be as big as the difference between milk from 
a human and a cow! :-)
As far as I know (sorry, no references...) the quality doesn't really differ 
in itself.
It will, of course, take a while before a proper production sets in with 
sufficient calories.
There will be no colostrum, though, with induced lactation.
I searched another bit and found this:

I once had a mom who wanted to induce for the child her friend was carrying 
and she and her husband were going to adopt.
I explained her how to use the pump and to our utter surprise, the first 
time she put the pump to her breast in my practice... a few drops appeared!
We were exhilirated and I said that if she would keep going, she might be 
able to establish some kind of production.
Unfortunately, she didn't persevere... She was pretty nonchalant about the 
number of sessions and even 'forgot' (?) to bring the pump with her on a 
weekend away from home.
After all, I wasn't sure if she really, really wanted to breastfeed.
I even did a home visit after the baby was born and together we tried to 
help the baby latch.
It didn't really work out, but I think it could have, had she been more 
determined to make it work and put her mind to it.
There were many other emotional issues, though. Finally having a baby that 
is not yours genetically is quite an adventure on its own.
