If this exhibition were in an art gallery where people knew about the
subject before they walked in the door, then I don't think you would
need to have any concerns except artistic ones. Since it is in a public
place where people did not come specifically to see breastfeeding art,
then I think it would be smart to arrange the work so that any potential
"shockers" are in the middle of the exhibition, not the first thing
people see and if possible not visible from outside the exhibit. Then
you can counter any complaints by saying, "If she didn't want to see
this picture, she didn't have to. Once she knew that it was an exhibit
about breastfeeding, she could have walked away."

Posting the clever responses may be a good idea, but even better would
be Real Live people from your coalition, wearing name tags, acting as
hosts and fielding questions and comments.
