In response to your question, the capsule dosage does vary. Here in
the USA,usually it is recommended to take 3 capsules three times daily.
Capsule dosage commonly seen is 600-725 mg. According to Dr. Newman, you
can tell if you are taking enough fenugreek when your milk and sweat have
the aroma of maple syrup.
I have not found it necessary to gradually wean down slowly from this herb.

It is uncertain how long it will take for the milk volume to increase, how
much it will increase, and it you can maintain the milk volume with or
without it.
Research does not indicate that it works, but breast feeding mothers
continue to take it and health professionals continue to recommend it.
 If further research is done, an extensive diet history needs to be done
prior to starting the fenugreek to determine if the mom's diet is absent or
low in whole grains.
