 Hello Naomi and All,
	I shared you question with my uncle who is a bible scholar,
professor and pastor. He teaches greek and hebrew. He says, 

"The Ex 16 passage deals with the mercy of God as He symbolically found
Israel as a helpless infant in it's own blood.  The rubbing with salt was a
custom that pointed not only to cleansing but that the child would be
preserved.  Salt is a preservative."
