Winnie, both of these herbs are common foods. Cooking with rosemary is
familiar to most of us.  The oils are just concentrations and are no more
of a problem than would be sunflower oil or walnut oil.

Same with flax seed.  The nutritional benifits of flax seed or flax seed
oil are coming into the news regularly now, since flax is a prime source of
omega 3 fatty acids, which along with fish oil is being recommended
frequently by physicians.  My internist recommended fish oil supplements
or, if I wanted to to the vegetarian route, flax seed oil.

Strength or dosage is not a problem in the same way as olive oil use is not
limited to a given dosage.

There is a good book written by a researcher from NIH on the need for omega
3 fatty acids in our diets.  We are too heavy in the omega 6's.  The book
is The Omega Diet and I have loaned it out and can't remember the author's
name.  It is not a " diet" book in the usual sense of the word, but a
nutrition lesson that is fascinating.
