I read this article recently and was surprised (shocked actually) to find
that Dr. Hale classifies kombucha as an L5. After reading the article
though, it made sense. It’s not really about the possibility of small
amounts of alcohol, it’s more that the tea detoxifies the body. The toxins
are then released through sweat, urine, stool, and breast milk if not well
hydrated.

Some of the cases mentioned in the article were obvious “home brewers”.
Kombucha can be easily made at home (I used to make it) with sweetened
black tea and a SCOBY (not a mushroom, which is a common misconception). A
SCOBY is a symbiotic culture of bacteria and yeast. Anyway, it can be
perfectly safe to make, but if you aren’t on top of rotating the batch, it
becomes increasingly strong, fermented, acidic, and that’s when problems
with drinking it can really arise.
