Actually, agriculture isn't as inherently responsible for the limited
consumption of certain foods as is hybridization (or factory-farming). Limiting a
crop, wheat or corn for example, to one hybrid strain causes more plant disease,
less overall bio-diversity and more potential for allergens to develop. Also,
I have seen on more than one occassion, that when someone who thought she was
"allergic" to a particular fruit for example, ate only organic, she was no
longer "allergic". We often forget to take into account the vast amounts of
pesticides and herbicides that may be ingested with many foods. I think it is often
difficult to really pin down certain allergens b/c there are confounding fac
tors like additives (synthetic colors, sweeteners, flavors and vitamins) as
well as pesticides and herbicides and hidden ingredients (esp hidden dairy,
gluten, soy, corn, etc). Many people in the US truly have no idea how unvaried
their diets are, what they are actually eating and how much they eat of certain
foods. The more processed a person's diet is, the less varied it will be, since
almost everything she eats will contain some form of wheat, dairy, soy and
corn (as oil or syrup).
