Hi Penny,
I have a few ideas. I agree with Debbi that it would be important to have 2
students at a time attend a meeting, rather than a whole group. I'm sure
you've considered that. You could give each set of 2 students a different
assignment, and then have a session where everyone shares their
observations. I think it would be hard to observe latching at a LLL mtg,
most experienced moms (babies) do it automatically, and any newbie mom might
not want someone observing them closely, so here are some ideas for
assignments:

--Observe and report on counseling skills - perhaps give them some
counseling techniques to look for and report back on examples etc
(reflection, re-stating, use of touch, etc, how the leader facilitated the
group, drew others in, or kept someone from monopolizing the conversation).
--List and discuss developmental milestones and/or stages of development
(for example, separation anxiety) before a mtg, then have them look for and
report on these in various ages of infants/toddlers
--Just observe and come back to discuss how they felt / attitudes about bf
in various ages of infants, esp if older babies/children are there
--Come back from meeting and discuss what are the common concerns of mothers
or barriers to bf that came up
