For whatever it's worth, I did find the answer to my question. This company (https://www.ceufast.com/) offer online continuing ed aimed toward nurses and they do offer courses in medical documentation, universal safety precautions and occupational safety. $29.95 for as many as you want to do in a year, so cheap too. 

So for my purposes as an English-speaking American, everything is available online and reasonably conveniently: general ed through local community college (and I actually have most of the courses under my belt already from my prior degree), lactation specific through Health e-learning (or other similar providers) and some of these onesie-twosie courses through ceufast.com.  Quick and easy, not necessarily, but that's ok. I'm up for expanding my brain a little bit.

Thanks for all the discussion this question has prompted. It's been very interesting and informative to me.
