I can't answer your question about proteins and processing but I can tell you
my personal experience with corn.  My daughter Anna who is almost eight
suffered from a corn allergy when she was about 15 months old.  We found that
she broke out in terrible hives when she had corn syrup and when she either
ate or even touched margarine.  Corn oil and corn itself were less bothersome
but if she had too much of either of these, she did have a reaction.  After
removing all corn and corn products from her diet for almost a year ( which
was next to impossible!) we did reintroduce small amounts of corn and today
she appears to have outgrown her allergy.
