Gayle,

Before giving too much focus on mother's diet causing constipation and
fussiness for a premature baby just now at 40 weeks gestation, I would want
to rule out hunger first.  It could be due to inadequate milk transfer due to
baby's fatigue.  Or, now it could just be a borderline milk supply due to
inadequate milk supply support early postpartum when the baby was probably
sleepy and not nursing as effectively as it can now.  If you can't see the
mother, have her feed her own milk via bottle more often and see if baby is
happier and stooling more then too.  Was she pumping the same amount the baby
was taking by bottle?

.... and if baby is gaining a ton *without the supplement* and you have ruled
out hunger?  Well, I'd find out what she is eating a lot of.  Chances are the
high risk allergens in her diet won't be all that different.  Maybe soy is
more likely, but milk, egg, citrus, wheat, peanut, etc. are all likely in her
diet regularly.  But I'll just bet the baby was hungry...
