Consider this my generic thanks to all who have responded to me off-list about the development of food allergies.  You've reinforced that my questions aren't crazy and that many theories abound, all with some plausible answers.  However, this seems to be an amazing arena for budding researchers who don't need any funding <g>.  Can you imagine pitting oneself against the food industry and inserting the oh-so-not-lucrative field of lactation into the picture? <g>  The leaky gut syndrome (LGS) is the one theory that the majority of you mentioned, but, IMHO and that of a PhD biochemist, there are "holes" in it that don't bring "closure" to the subject.  (Sorry, it's late and my puns are really bad at this hour...)  So...more research is needed.
