I don't know of any studies specifically addressing sub-mucosal  
restrictions. May exist, but I haven't seen it. As for the tongue shaping  the palate, 
there is a phenomenon called Wolff's Law, which is basically that  muscle 
shapes/moves bone. Bone adapts to the work loads on it. Dr. Coryllos  pointed out 
that in utero, the palate is high and arched at first, then with  repeated 
stroking/sucking and swallowing of anmiontic fluids, the palate becomes  broader and 
lower. If the tongue movement is restricted in some way, the lack of  
elevation means lack of bone stress/reshaping. The palate remains high and  arched or 
gets bubbled because perhaps part of the tongue gets up there but the  wave 
of the entire tongue and smooth lowering/'broadening doesn't  happen.  Hope 
that makes sense.
