I feel as though I am waiting a little late to register and book a room for
Apimondia, but found an oddity I am passing along:

The room reservations via the Apimondia site don’t have Sunday evening
available. The company responded that if I put the room in my cart and
notify them, they will attempt to get Sunday night added to my cart
manually. The same is true for staying beyond Friday evening. I expect
to join them for the apiary tour(s) on the 9th but suppose I will need to
assume my own lodging afterwards.

I say reservations but in reality you are paying in advance.

If anyone going has any suggestions for alternate lodging I am not
committed to using them but the prices seem reasonably discounted to me.

I hope I am not going to be out of my league at this event, as I am just a
sideline beekeeper! But we love travel to Central and South America and
are extending this as a vacation.
