If high palate is due to lingual tongue-tie, then once clipped and baby is
latching deeply and well, breastfeeding itself will help to shape the
palate to more normal dome shape. This can take several weeks or so. I've also
been told by a dentist that manually applying pressure with first finger,
pad side on palate, and sweeping from midline to right side, then midline
to L side of the palate can shape an infant's palate over time and needs to
be done several times per day (not 100% sure about frequency, so anyone
else who's instructed this please verify).

Are there any exercises that can help change the shape of High Arch
palates
