It is possible that sugar (particularly the wrong sugars or in excessive
amounts) can alter gut permeability and increase the risk of an allergy
or intolerance.
There is a difference between allergy and intolerance. Excessive sugar
(sucrose/glucose) intakes have depleting effects on vitamin B metabolism
(according to my RD sister, I don't know the mechanism myself), and may
be bad for us because of that. Intolerance is any type of bad effect
from a food, whereas allergy has a specific mechanism caused by IgE
activation against a food component, usually a protein.
Physiology is so complex, I just love it, but have a hard time keeping
up. The literature on mechanisms of allergy is incredible in itself.
It's so nice to picture you as I read your words, Karin!
