Question: If this is indeed a function of baby's metabolism, rather than a
change in breastmilk components, then how come the amounts of formula
continue to need to increase over time, while breastmilk needs don't? We
frequently see artificially fed babies taking 6-8 oz bottles as they get
older!
I'm really curious about where the difference comes from...

Best wishes,

Hartmann and Geddes research of recent years measures volumes of
breastfeedings as averaging 70ml/ feed for age 1month on. (as I recall).
This is per feeding and I don't remember any specific interval between
feedings.
The explanation for why this volume per feed does not increase over time
does not have to do with changing milk components, but rather decreasing
body surface area and changing metabolism.
