The bacteria in the cheese or other fermentation product do partially digest
the protein as well. If someone had only a very mild protein sensitivity they
would do a little better with cheese over milk but there are plenty of intact
bovine proteins in cheese left over to be passed through mother's milk and
irritate infant intestines.
