Just to add to Lynn's post - my middle son was very dairy sensitive (hidden dairy in tuna I ate could set off symptoms) and when I began doing dairy free I noticed some changes at 3 days, in fact every 3 days another problem would be gone.  First was the crying non stop from 4-5 pm until about 10-11 pm, then the spitting up, then the diarrhea, then the redness in his cheeks and lastly the patches of thick, redness on his arms & legs.  That can be enough to show you that you are on the right track.
