I have no information about milk supply and open heart surgery other than
this anecdotal tale:

I recently cared for a woman who had heart surgery at 8 mo and 21 yrs. She
had a normal pregnancy, spontaneous labour, physiological birth with no drugs
or intervention. Breastfeeding went well from birth; but her supply was a
bit lean to say the least. Baby did grow, but slowly, and mum started
pumping and taking domperidone when baby was about 3-4 mo old. She has now
weaned, at 6 mo, after supplementing for a while.

While I don't think it was all about an impaired supply (there were other,
social factors including 'sleep training') I hadn't considered the heart
surgery as a factor. I would be intriged to hear others experiences.
