My sister Carole is a registered dietician/ clinical nutritionist, and 
she had the following recommendations:

> American Dietetic Assoc has a good layperson book -
> ADA's Food and Nutrition Guide.  If she wants more technical, she should get
> Krause's Food Nutrition and Diet Therapy.  First one she can get at
> eatright.org.  2nd publisher is Mahan Escot-Stump.
