Nan is correct, the tongue participates in 2 phases of the swallow: the 
oral preparatory phase, and the oral phase.
Peristalsis begins with the tongue. Several very respected scientists 
(including James Bosma, MD, who dedicated his career to studying 
swallowing difficulties) believed that the timing of suck/swallow 
movements is critical for the peristalsis of the entire digestive tract.
