This baby sounds like he spent several weeks getting just enough to eat, but
not quite enough to be thriving.  Now that he is taking in larger meals (and
possibly more than 7 feedings per day) he is gaining all the weight he would
have gained in the first month and beyond. You mention that he was near
birth weight at a month rather than 10-14 days which would be more typical.
I suspect when he gets close to his "target" weight for age he will level
off on both how much he is eating and how fast he is gaining.  It does not
sound like he has such a strong personality, just a strong need for more
mommy and more milk.
