This was my observation for my children (3) also.  Same pattern only no oversupply issues that I know of.  In the beginning they gained 2 oz a day and then tapered off but were normally fat with dimples.   I could count on the once a week (5-7 days) poop and just hoped I was home when it happened, because it was so huge.  This began about 6 weeks old until the introduction of solids at 7-8 months.  I did notice less stool during growth spurts and was told this was normal.  So I really never gave it much thought.

Was also my personal experience with my last baby who gained tremendously (can't lay my hands on the baby book this am, but he was FAT). From 7 weeks to about 7 mo he pooped approximately every fifth day. Was happy and contented. I know, looking back that I had an oversupply problem. Where that fits in, I'm not sure.
