Could you stay current with the IBCLC part incase the other IBCLC/childbirth instructor leaves town or quits her job? If that is where your passion lies, I would imagine you'd want to be able to jump back into things if she is no longer in that capacity.
I don't know where in Colorado you live, but could you attend the Lactation Journal Club once a month in Denver? How about LLL conferences every other year to keep your feet wet? Those things won't supply you with all the continuing ed you need, but it would help supply you with some hours as well as current info and interaction with other LCs.
