Reactions to foods can also be caused by the food preparation process.
For instance, when person who is allergic to latex  eats a food prepared
by someone wearing latex gloves.  It may appear that this person is
having a reaction to the food.  You may have to become a super sleuth in
order to find the culprit.  Latex is a plant protein and  has similar
chains in other plants such as kiwi, banana, potato  skins and avocado.
A person who is allergic to food preservatives such as meta-bisulphites
and latex would have difficulty nailing down the allergen source if they
were not aware of their  sensitivity to both.  Sulphite presence has to
be included in the food package label but no mention of food handlers
wearing latex gloves or latex in the food packaging will be found.  Both
can cause reactions similar to those described in  the questionable
carbohydrate reaction.  I wish you luck in finding the causative
agent.
