Jo-Anne,
According to Udo Erasmus, who to my knowledge has done the most research
anywhere on oils in the human diet, when we "oil ourselves from the inside",
we are indeed protected from some of the sun's dangerous rays. Conversely,
highly unsaturated fatty acids (such as from animal fats), when exposed to
the sun, cause age spots, free radical-induced oxidation and cancer. (These
oils cause less problems for peoples living in low light regions, like the
Inuit). As you move into more temperate zones, the oils native to the areas
are mono-unsaturated fatty acids (almond and olive, for example) and in the
tropics, they are saturated (such as coconut oil). According to Erasmus,
staying out of the sun will dramatically increase the rates of osteoporosis.
The more sunlight in a given region, the more EFA's are naturally available.
So, we need sunlight and EFA's. I highly recommend "Fats That Heal, Fats That
Kill". It is a major education in nutrition in and of itself.
