I haven't read any studies about the effect that baking or cooking has
on cow's milk proteins. I can only share my personal experience of 17
years with a cow's milk allergy. It doesn't matter to my body if the
whey or caseinate is heated by cooking or baking. I still get an
allergic reaction of a severe headache whenever whey is a component of
the foods that I am eating, even if whey is the last ingredient listed
on the label!
