I seem to recall that microwaving also changes the structural composition of
milk. I can't remember exactly what it does, but I know I was taught in
Nutrition classes that one should never microwave any type of milk product.
I think it alters the protein stucture or something like that. I'm leaving
tomorrow for the LATCH Conference to hear Dr. Sears speak, but I wil try to
find the reference when I return. I will ask Dr. Sear about his web site if
it is appropriate or the opportunity presents itself.
