Tony Morgan wrote that herbs keep very well in honey and taste very fresh.
 He's absolutely right.  Another wonderful herb/honey combo is to warm honey
slightly and pour into a jar with a pretty sprig or two of herbs (rosemary,
thyme, lavender, tarragon all work wel).  Let sit for a day or two, add a
ribbon and give as a gift (or use yourself, of course).  The herb-flavored
honey is wonderful for the essence infuses the honey wonderfully well.  An
alternative to heating is to place the herbs in the honey and leave on a
sunny windowsill for a week or two.
